Our limited edition Pumpkin Bagels are the perfect canvas for The Rancher – a topping of smooth avocado, crunchy lettuce, juicy tomatoes and super crispy bacon. But the best thing is the maple mayonnaise. That’s right, mayonnaise spiked with sweet maple syrup is the perfect way to crown this beauty. Be warned though, this mayo is so delish you might find yourself putting it on all your bagel creations.
- 1 packet of ABE’S Pumpkin Bagels
- 1 ripe avocado
- 1 large tomato, thinly sliced
- 125g streaky bacon
- crunchy green lettuce
- 3 tablespoons mayonnaise
- 1 tablespoon maple syrup
- salt and pepper
Method: Preheat your oven grill to the highest temperature.
Place the avocado in a bowl with a pinch of salt and pepper and mash with a fork until smooth.
Whisk the mayonnaise and maple syrup in a small bowl with a pinch of salt and pepper until combined. Set aside.
Slice two ABE’s Pumpkin Bagels in half and place under the grill until nice and golden. Remove to a lower shelf in the oven to keep warm.
Place the bacon on a non-stick oven tray and pop under the grill for 5-6 minutes, turning halfway through until crispy and cooked to your liking. Remove and drain on paper towels.
Assemble: Spread the avocado evenly on the base of each bagel, add a layer of lettuce, sliced tomato and bacon, then spoon the maple mayo over the bacon. Place the top of the bagel on, cut in half and you’re good to go.
